I think it’s more modeling. I never bring in my children and say, “Listen, these are the values you should follow in life.” I think it’s a modeling by my wife and me. I think we give them a good life. They saw how we go through life: a difficult time, a hard time, good time. I am very happy. I think they are good kids. If I have hope, it’s because I look at my children.

My greatest joy as a father is to see our children growing up and growing independent, and becoming brilliant ... But also every now and then needing me for something and remembering where I can fit into the world. And one of the great joys you realize is that you need them ... You work for their smile. You work for their joy.

I’ve never been this close with anyone, or spent this much time with any other person in my life. We talk talk talk so openly about everything, and do everything together. He’s definitely the love of my life.

Being a father teaches you very quickly that you are not the center of your own universe. That’s one of the gifts of having to wipe poop!

Pavarotti’s Nessun Dorma. I’m a big sports fan and Italia 90 was such a massive part of my life when I’d just turned 17. That tune just builds and builds. I can imagine a massive coffin disappearing down while he’s singing. What better way to go?

The people that already do it, Lourdes Dooley, Aaron Mulliss, Nick Bearshaw, Claire Kreigenfeld and all of their amazing support team, and of course the amazing Alex Longstaff who has to deal with my childish antics on an hourly basis.

Everything that’s happened to me was because I said yes to everything and gave it a go. I never thought, wouldn’t it be good if I got two Michelin stars and my own TV shows. I just tried my hardest at everything I got the chance to do. If I could give the younger me advice I’d just say, never underestimate graft. Give up on sleep, work very hard, and it will pay off. Graft graft graft. And never give up.

With friends, it’s good to know where you stand. I’ve surrounded myself with people who are very open. Lots of the blokes I know are very emotional: we have honest conversations.
